Eggs A La King - Vintage Recipe

A quick, simple, and luscious dinner fit for a King or Queen. This dinner is rich and delicious even with all canned ingredients.

Full Recipe

1/4 cup butter or margarine

1/4 cup all-purpose flour

3/4 teaspoon salt

Dash white pepper

2 cups milk

2 tablespoons catsup

6 hard-cooked eggs, sliced

1 6-ounce can sliced mushrooms, drained (1 cup)

1/2 cup cooked or canned peas

2 tablespoons chopped canned pimiento

6 thick tomato slices

6 slices buttered toast

Directions

Melt butter in saucepan.

Blend in flour, salt, and pepper.

Add milk all at once; cook, stirring constantly, till thick and bubbly.

Remove from heat.

Stir in pimiento; heat through.

Sprinkle tomato slices lightly with salt; broil 2 to 3 minutes.

Place a tomato slice on each toast slice.

Spoon sauce over.

Serves 6.
