Blancmange
Blancmange is a delicious medieval vanilla dessert originating in the 1300s, but most recipes come from the 1600s. It is a sweet and creamy dessert that requires only five ingredients and just a few minutes to make. Blancmange is truly a blank canvas of a dessert and can be fancied up with fruits, jams, nuts, chocolates, extracts or colors to fit any occasion. Use milk or almond milk to make this delicious treat.

1/3 cup sugar
3 tablespoons cornstarch
2 1/2 cups milk or almond milk
1 1/2 teaspoons vanilla
1/4 (dash) salt
Mix sugar, cornstarch, and 1/4 teaspoon salt in saucepan; gradually blend in milk. Cook over medium heat, stirring constantly, till mixture thickens. Once thickened cook 2 to 3 minutes more, stirring constantly. Add vanilla. Pour into sherbets; chill. Or pour into individual molds rinsed with cold water; chill till firm. Unmold to serve. Makes 5 or 6 servings.
